Pumpkin Mashed Potatoes

Thanksgiving is less than a month away, which means it’s the season of holiday parties and family gatherings.  Tables are filled with delicious appetizers and festive meals, however, some of our favorite treats are often packed with added sugars and other unhealthy ingredients.   For a better way to embrace our favorite holiday foods, then this amazing recipe created by Chef Anthony Stewart from Pritikin Longevity Center + Spa.

Ingredients:

  • 1 pound Yukon Gold Potatoes Quartered
  • 1 pound Calabaza Peeled, Seeded, and Cut Into Large Chunks
  • 1 Cup Sour Cream, Fat Free

Instructions:

  1. In a large pot, cook potatoes and pumpkin in gently boiling water until tender, about 20 to 25 minutes. Drain in a colander.
  2. In a large bowl, mash potatoes and pumpkin with a wire whisk. Add sour cream and mix well.
